Western food culture emphasises convenience, quantity, and year-round availability. Japanese food culture emphasises seasonality (shun), presentation (moritsuke), and gratitude (itadakimasu). In Japan, a strawberry in January is not the same as a strawberry in March. The specific moment of an ingredient's peak perfection is respected — and once the peak passes, the ingredient yields to the next season's offerings.
